Product Introduction
Gin production is a two stage process. First, a base "neutral spirit" is required (produced or purchased). The neutral spirit is then flavored through re-distillation with botanicals such as seeds, berries, roots, fruits, herbs and spices, with its predominant flavor coming from the juniper berry.
A gin basket is sometimes used to infuse the passing vapor with botanicals instead of soaking the botanicals in the pot still. Some distilleries will simply purchase their base neutral spirit and carry out only the gin distillation on site. Other distilleries prefer to distill their own neutral spirit creating a truly craft gin.
